Oh my gosh! Tonight along with an amazing Crispy Cheddar Chicken that I made for the first time I made these oven roasted potatoes. They were so good! Dad is on a feeding tube and besides his liquid food, he can have soft things. I wish these potatoes were these so he can have them. We keep telling him that he has to keep doing his throat exercises so he can eat these. The only thing I did different was to use Grated Parm cheese. The Parm Reg cheese you use costs about 15 to 16 dollars a pound in my store and the store cuts and wraps the pieces! It’s cheaper to buy a steak! My mom said the whole recipe with the chicken, potatoes & white and yellow corn was like a meal you would get in a fancy restaurant! The potatoes were crispy and soft at the same time, they had tons of flavor, they were just amazing! What I did was cut the potatoes up before they went into the boiling water. That saved a little time since we had to go out before I made supper. We ate a little late tonight but it was a meal I would so totally make again! It was well worth the wait! My mom says next time she makes chicken cutlets I should make these potatoes because my family would love them! Thanks for such an amazing potato recipe. I was so glad they were yummy when I finally got to eat them!
